Tonight's healthy dinner! Stuffed pesto chicken

Tonight's healthy meal was stuffed pesto chicken with quinoa

Ingredients (serves two)

Two chicken breast
One pepper (I chose orange)
1cup of spinach
One small zucchini
Classico basil pesto

Sautée one pepper thinly sliced, zucchini chopped small with a bit of pesto and extra virgin olive oil
Marinade chicken in pesto for desired amount if time or just coat the chicken with it, (marinating would infuse the chicken with more flavour) butterfly the chicken

Cook the chicken in frying pan till cooked

Add spinach to the veggies at the end once wilted it's done

Cook quinoa in the side

Put chicken in your plate fill with veggies with a quarter cup of quinoa on the side

And yummo!!
