Tonight's healthy meal! Egg plant pizza

If you love eggplant and pizza then this is a happy medium! 


Low fat cheese
Large egg plant

Cut into slices, place on baking sheet top with sauce, cheese and pepperoni (or toppings of your choice)

Baked 375 for 20minutes

Voila! Your done! 

Eat with a fork and knife and make sure you have equal parts eggplant cheese and toppings in each bite!
